Glucoamylase is a type of enzyme found in the digestive system. Amylase is naturally produced in the mouth and pancreas, but can also be found in plants and animals.

Glucoamylase breaks down both α-1,4 and α-1,6 bonds, so the stomach can fully digest the starch found in vegetables and other foods high in carbohydrates, such as potato, bread, and rice. The glucose that is freed from the break down becomes the source of energy for the body.
